200ml fresh lemon juice
500g caster sugar

To make the Drink (makes 850ml, enough for 10)

A few cranberries, for garnish

For the Cordial: Place all the items into a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Then, remove from the heat allowing it to reach room temperature fully. Decant into an sealable bottle, close it and store chilled, it can be stored for up to one month.

To make Premix: Pour the specified liquid ingredients into a big jug, let it rest for one hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.

For serving: Pour 85ml of your premix into a mixing glass filled with ice, and agitate lightly for about 60 seconds to chill. Pour into a chilled martini glass or equivalent, garnish with the cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
